Beef silverside

The silverside is a large, compact, and lean muscle from the beef hindquarter.
It is characterized by a darker color and a distinct, pronounced flavor. Due to its structure, it is an ideal raw material for curing and smoking (e.g., for homemade deli meats like pastrami), as well as for long braising in the form of traditional beef olives (zrazy) or pot roasts.
