Beef tails

The beef tails is one of the most aromatic cuts, highly prized in "slow food" cuisine.
Thanks to its high content of bone, cartilage, and collagen, it is an irreplaceable base for preparing essential stocks, such as the classic oxtail soup. After long braising, the meat becomes exceptionally soft and tender, easily falling off the bone, making it an ideal ingredient for exquisite one-pot dishes.
